Ingredients:

• 300 g – flour
• 120 g – Butter
• 2 cups – Milk
• 3 cups – castor Sugar
• 12 tsp – condensed Milk
• 6 – Bananas
• 2 – Oranges
• 2 – apples
• 10 g – Pistachios
• 2 tsp – vanilla essence
• 2 tsp – Strawberry essence
• 1/2 tsp – red colour
• 1/2 tsp – yellow colour
• 2 tsp – baking powder
• 1/2 tsp – baking soda
• A pinch – salt

Method:

  1. Combine together melted butter, milk, condensed milk, vanilla essence and the yellow colour essence. Beat well.
  2. Sieve flour, soda bi-carb, baking powder, salt and add to the beaten mixture.
  3. Grease and dust a baking tin and pour batter into it.
  4. Bake at 180 C or until an inserted skewer comes out clean.
  5. Cool it for 5 mins. before turning out onto a wire rack for further cooling.
  6. Cut into half horizontally. Remove top layer.
  7. Whip cream, castor sugar, strawberry essence and red food colour essence until thick.
  8. Spread cream on the bottom layer.
  9. Add chopped fruit then the cream and finally place back the top layer.
  10. Decorate the top of the pudding with cream and chopped pistachios.
  11. Leave for 20 mins to set before serving.
