Ingredients:
• 2 cups – Tomato juice
• 1 tbsp – red Vinegar
• 2 tbsp – fresh Basil Or 2 tsp -dried Basil
• a little pepper and salt
• 2 tbsp – plain Yoghurt
Method:
- Pour all the ingredients, except yogurt, into a pan and heat through slowly, simmering, for a minute or two to soften up the basil (if dried).
- Serve hot or cold, stirring in the yogurt just before serving.
