Ingredients:
• 1.5 cups – Rice Flour
• 1/2 cup – Methi Leaves, chopped
• 1/4 cup each – Curry leaves and Coriander Leaves, chopped
• 1- Onion, medium sized, chopped finely
• 1 – Carrot, grated
• 2 – Green Chillies, chopped finely
• Salt to taste.
Method:
- Mix all the ingredients in a bowl and add water and mix to get a dough which is slightly softer than that for chapattis.
- Even if the water is slightly more its okay.
- Now take a pan with handle, smear oil on it and take a round of the dough on the pan.
- Pat it into a thin round shape with your palms using some water if necessary.
- Now keep it on medium flame and cook, pour a tsp oil on the sides and cover with a plate.
- After few mins, remove the plate and cook uncovered after turning the side.
- Serve with coconut chutney. This type of roti is not only very tasty but also very nutritious.
