Ingredients:
• 2 cups – Ragi flour
• 2 cups – Maida ( all purpose flour )
• 2 tbsp – Mustard Seeds
• 2 tsp – Hing powder
• 6 to 7 – Curry leaves
• 1/2 inch – ginger, cut into small pieces
• 4 tbsp – oil
• 2 tbsp – grated Coconut
• Cilantro (optional )
• Sugar to taste
• salt to taste
• water
Method:
- In a pan, heat a little oil and add the mustard seeds.
- After they have spluttered, add hing powder and the curry leaves and keep it aside.
- In another bowl, add the ragi flour and maida flour.
- Add water to make a very thin batter.
- Add the seasoned ingredients, salt, sugar, cut ginger pieces, coconut and cilantro.
- Take a non-stick pan, and after it’s heated, add the batter.
- Add oil to the edges of the dosa. Flip and cook the other side for a few minutes.
- Serve hot with pickle or chutney.
