Ingredients:

• 2 cups – Ragi flour
• 2 cups – Maida ( all purpose flour )
• 2 tbsp – Mustard Seeds
• 2 tsp – Hing powder
• 6 to 7 – Curry leaves
• 1/2 inch – ginger, cut into small pieces
• 4 tbsp – oil
• 2 tbsp – grated Coconut
• Cilantro (optional )
• Sugar to taste
• salt to taste
• water

Method:

  1. In a pan, heat a little oil and add the mustard seeds.
  2. After they have spluttered, add hing powder and the curry leaves and keep it aside.
  3. In another bowl, add the ragi flour and maida flour.
  4. Add water to make a very thin batter.
  5. Add the seasoned ingredients, salt, sugar, cut ginger pieces, coconut and cilantro.
  6. Take a non-stick pan, and after it’s heated, add the batter.
  7. Add oil to the edges of the dosa. Flip and cook the other side for a few minutes.
  8. Serve hot with pickle or chutney.
