Ingredients:

• 6 – medium Peaches or nectarines, peeled, pitted and sliced
• 3 tbsps – Lemon juice
• 1/2 cup – water
• 3 tbsps – Sugar
• 1 tbsp – cornstarch
• A pinch of ground Cinnamon
• 2 – Cloves
• 1 – banana, sliced
• 1/2 kg – plums, pitted and quartered
• 1 cup – seedless green grapes, halved
• 1.5 cups – Blueberries

Method:

  1. Toss half of the peaches with 1 tbsp of lemon juice. Set aside.
  2. In a microwave safe casserole combine remaining sliced peaches, water, and 1 tbsp of lemon juice.
  3. Cook, covered, on high for 3 to 5 mins or till very tender, stirring twice.
  4. Do not drain juice in casserole.
  5. In a blender or food processor, blend peaches and the juice till smooth. Return to casserole.
  6. In a small mixing bowl, combine sugar, corn-starch, cinnamon and cloves. Add to casserole.
  7. Cook uncovered on high for 2 to 3 mins or till thickened and bubbly. Stir every 30 secs.
  8. Cook uncovered on high for 1 min more.
  9. Cool. Toss banana with remaining lemon juice.
  10. Layer fruits in a glass bowl, using half of the remaining peaches, all of the plums and all the grapes.
  11. Alternate bananas and strawberries on top.
  12. Continue layering remaining peaches and all the blueberries.
  13. Spoon peach sauce when done layering.
  14. Chill and serve.
