Ingredients:
• 2 cups – all – purpose flour
• 1/2 cup – Orange juice
• 1 tbsp – Orange zest
• 2 tbsp – baking powder
• 2 – eggs, beaten
• 100 g – butter, room temperature
• 1/4 cup – Honey
• 1/2 cup – Sugar
• 1 cup – Raspberry chunks
Method:
- Preheat the oven to 350F, grease a muffins mould.
- Sift the flour and baking powder in a large bowl and stir sugar, make a well in the centre.
- Combine the egg, honey and butter in a another bowl and beat until they turn soft and creamy.
- Pour the egg mixture, orange zest, orange juice to the flour and stir quickly, do not overmix.
- Gently fold the raspberries and pour the mixture in the greased muffins mould and bake for 20-25 minutes, until the muffins turns golden.
- Serve warm
