
Ingredients:
• 1 bunch – fresh red Spinach or green (red Spinach tastes better)
• 2 tsp – grated fresh Coconut
• 2 tsp – oil
• 1 tsp – Mustard Seeds
• 2 – Curry leaves
• 3 – Garlic flakes
• 1/2 tsp – Turmeric powder
• 1.5 tsps – Chilli powder
• Salt
• Oil
Method:
- Chop spinach.
- Heat oil in a pan and fry mustard seeds and curry leaves.
- After the seasoning is done, add chopped spinach and salt.
- Grind coconut, turmeric powder and chilli powder.
- Add this into pan.
- Put some garlic flakes onto pan.
- Cover and simmer for a few minutes.
- Serve this curry with hot rice.
