Ingredients:
• green or white ribbon Pasta – 250 gm
• Capsicum 1 big
• Spring onions – 8 to 10
• Cucumber – 1 medium size
• oil – 3 tbsp
• Garlic 3 Cloves
• Tomato puree – 1/2 cup
• soya sauce – 1 tbsp
• curry powder – 2 tbsp
• Sugar – 1/2 tsp
• salt to taste
Method:
- Cook pasta in plenty of boiling water to which 1 tsp salt and 1 tsp oil is added.
- Drain, rinse with cold water and keep aside.
- Cut the capsicum into two parts.
- Remove the seeds and cut into thin strips.
- Peel and cut the cucumber into math stick like strips.
- Chop the spring onions and mince the garlic.
- Heat the oil and fry garlic till light brown.
- Saute the capsicum and cucumber.
- Add the spring onions and curry powder.
- Fry for 1 minute.
- Add the tomato puree, soya sauce, salt and sugar.
- Bring to a boil, add noodles.
- Lower the flame and cook covered till the noodles are heated through.
- Serve immediately.
