Ingredients:

• green or white ribbon Pasta – 250 gm
• Capsicum 1 big
• Spring onions – 8 to 10
• Cucumber – 1 medium size
• oil – 3 tbsp
• Garlic 3 Cloves
• Tomato puree – 1/2 cup
• soya sauce – 1 tbsp
• curry powder – 2 tbsp
• Sugar – 1/2 tsp
• salt to taste

Method:

  1. Cook pasta in plenty of boiling water to which 1 tsp salt and 1 tsp oil is added.
  2. Drain, rinse with cold water and keep aside.
  3. Cut the capsicum into two parts.
  4. Remove the seeds and cut into thin strips.
  5. Peel and cut the cucumber into math stick like strips.
  6. Chop the spring onions and mince the garlic.
  7. Heat the oil and fry garlic till light brown.
  8. Saute the capsicum and cucumber.
  9. Add the spring onions and curry powder.
  10. Fry for 1 minute.
  11. Add the tomato puree, soya sauce, salt and sugar.
  12. Bring to a boil, add noodles.
  13. Lower the flame and cook covered till the noodles are heated through.
  14. Serve immediately.
