Ingredients:

• 1 cup – short grain or rounded Rice
• 1/3 cup – coarsely broken vermicelli
• 2 tbsp – Ghee
• salt to taste
• 2 cups – hot water

Method:

  1. Wash rice in plenty of water.
  2. Soak in warm salted water for 30 minutes.
  3. Drain and keep aside in a sieve.
  4. Melt ghee in heavy pan. Add vermicelli.
  5. Stir gently till lightly browned.
  6. Add rice and stir gently again, till rice is coated with ghee.
  7. Add salt and hot water and bring to a boil.
  8. Cover and reduce heat and simmer till rice is cooked.
  9. Check in-between, adding more water if necessary.
  10. Rice should be fully cooked but not mushy.
  11. Serve hot with stew, etc.
