Ingredients:

• 180 g – Butter
• 230 g – Sugar
• 1/2 tsp – baking powder
• 150 g – mixed fruit
• 30 ml – Milk
• 230 g – all purpose flour
• 4 – eggs
• 1/2 tsp – vanilla essence
• 50 g – Almonds

Method:

  1. Blanch almonds and chop. Mix the fruit with the almonds.
  2. Beat eggs with vanilla essence and set aside.
  3. Cream butter and sugar and add the beaten eggs gradually.
  4. Fold in half the flour and fruit mixture into the creamed mixture and mix thoroughly.
  5. Fold in the remaining flour and fruits.
  6. Add milk to get a good consistency.
  7. Grease and flour an 8 inch baking tray and pour in the cake mixture.
  8. You can add the remaining fruit and chopped almonds on top.
  9. Bake at 350 degree Fahrenheit for about 40 minutes.
  10. After this, switch off the oven and leave it inside for around 10 minutes.
  11. Remove from the oven and place it on a wire rack to cool.
