
Ingredients:
• 1 cup – Ridge gourd peels
• 1 cup – Green Spring onions
• 4 – Dry Red Chillies
• 1 – Tamarind (blueberry size)
• 1 tbsp – Urad Dal
• 2 tbsp – Grated Coconut
• Oil
• Salt
• 1/2 tsp – Mustard Seeds
• A few Curry leaves
Method:
- Heat a few drops of oil and fry the dry red chillies, tamarind and urad dal until they turn golden brown.
- In the same pan, saute the ridge gourd peels and green spring onions until they shrink a bit.
- Grind the sauteed peels and spring onions along with the fried mixture, grated coconut, water and salt until they turn into a coarse paste.
- Heat enough oil, let the mustard seeds and curry leaves splutter and add immediately to the ground chutney. Recipe courtesy: Priya Easy N Tasty Recipe
