Ingredients:

• 2 – Zucchinis
• 1 – squash
• 4 – Potatoes
• 4 – Carrots
• Cooking spray or Olive oil
• Salt
• Oregano – as needed

Method:

  1. Preheat oven to 200 degree F.
  2. Slice all the vegetables into wedges or cube them.
  3. Coat 2 large baking sheets with cooking spray.
  4. Place zucchini and squash in a single layer on one baking sheet.
  5. Place potatoes and carrots in a single layer on the other baking sheet.
  6. Coat vegetables with cooking spray and season with salt and oregano.
  7. Roast for 1 hour and then rotate trays.
  8. Roast until vegetables are crisp and dry – another 30 to 60 minutes.
