Ingredients:

• 1 bunch – Sarson (mustard) greens
• 1 bunch – Spinach
• 1 Onion (grated)
• 1/2 tsp – Ginger (grated)
• 1/2 tsp – Garlic (grated)
• 3 Green chillies
• 1 tbsp – grated cheese or Paneer (optional)
• juice of 1/2 Lemon
• salt to taste
• 2 tbsp – Ghee
• 1 tbsp – oil
• 1/2 tsp – Garam Masala
• 1 tbsp – Maize flour

Method:

  1. Chop the greens, wash and drain.
  2. Heat oil in a pressure cooker.
  3. Add the greens, along with the green chillies, and stir well.
  4. Add the ginger and garlic, and stir.
  5. Add a few pinches of salt along with 1 cup of water.
  6. Pressure cook till done (2 whistles). Mash well.
  7. Heat ghee in a pan, add the onion, saute till brown.
  8. Add all the other ingredients, except the cheese.
  9. Stir well and cook till oil separates.
  10. Garnish with cheese.
