
Ingredients:
• 6 slices bread
• 1.5 cups – sausage Meat
• 1 Onion (finely chopped)
• Butter
• 2 hard boiled eggs (sliced)
• Tomato ketchup
• Mint leaves
• Salt and pepper to taste
Method:
- Trim, toast and butter the bread.
- Lightly fry the onion in some butter; add the sausage meat, salt and pepper. Blend in a little tomato ketchup and spread on the toasted bread.
- Arrange the slices of egg on top and sprinkle with chopped mint leaves.
