Ingredients:

• 2 – medium sized Brinjals
• 1 tsp – cumin powder
• 1 tsp – coriander powder
• 0.5 tsp – Turmeric powder
• 1 – Onion
• 1.5 tsp – Red Chilli powder
• 1 tsp – Mustard Seeds
• Oil for frying
• Salt

Method:

  1. Cut the brinjals into thin pieces, soak in salt water for 2 mins.
  2. Heat 4 spoons of oil in a pan, add mustard seeds and chopped onion.
  3. Fry it till the onion becomes brown in colour.
  4. Then add the brinjal, cover and cook for 2 minutes. Keep stirring the contents after every two minutes or so.
  5. When the brinjals are fried, add turmeric powder, coriander powder, red chilli powder, cumin powder and salt.
  6. Sautee it for 2 more mins.
  7. Serve hot with chapathis.
