
Ingredients:
• 450 g – minced, cooked mutton/chicken
• 1 kg – potatoes, peeled
• 100 g – Butter
• 2 – medium eggs
• 50 g – peanuts, chopped
• 1 – Onion
• pepper to taste
• salt to taste
Method:
- Cook the potatoes in lightly salted water until tender.
- Drain and mash well with butter.
- Beat in the eggs and seasoning.
- Put the potato mixture into a piping bag fitted with a star nozzle.
- Pipe out four flat circles about 10 cm diameter on a baking tray lined with non-stick paper.
- Pipe another around the edges to make nests.
- Divide the mince mixture into each nest.
- Garnish with peanuts and parsley.
- If serving immediately, brush the potato nest with a little beaten egg and brown under the grill.
- Serve hot with salad.
