Ingredients:

• 1 cup – Maida
• 1 tsp – baking powder
• 1 tsp – salt
• 2 tsp – Sugar
• 1/2 tsp – Turmeric powder
• 1/2 cup – oil
• 1/2 cup – minced Onion
• 1/2 cup – finely chopped carrot, cooked
• 1/2 cup – finely chopped beans, cooked
• 2 – green chillies, chopped
• 1 tsp – ginger, chopped
• 1 tbsp – coriander leaves, chopped
• 1 tbsp – Mint leaves, chopped
• 2 – eggs
• 2 tsp – Lime juice

Method:

  1. Lightly grease a 8 inch round microwave cake dish.
  2. Mix maida with baking powder, salt, sugar and turmeric powder.
  3. Combine 1/2 a cup of oil with onion in a shallow microwave proof dish and cook on full power for 3 minutes, stirring once half way through.
  4. Mix in the carrot, beans, chillies, ginger, coriander and mint leaves.
  5. Whisk the eggs with remaining oil and lime juice till frothy.
  6. Mix in the maida and vegetable mixtures.
  7. Pour in the prepared cake dish.
  8. Cook on full power, without covering, for 4 to 5 minutes. Let it stand for 10-15 minutes, till it cools slightly.
  9. Spread the top with some coriander/mint chutney. Decorate it with tomato slices and grated carrot.
  10. Cut and serve straight from the dish.
