
Ingredients:
• 1 cup – Maida
• 1 tsp – baking powder
• 1 tsp – salt
• 2 tsp – Sugar
• 1/2 tsp – Turmeric powder
• 1/2 cup – oil
• 1/2 cup – minced Onion
• 1/2 cup – finely chopped carrot, cooked
• 1/2 cup – finely chopped beans, cooked
• 2 – green chillies, chopped
• 1 tsp – ginger, chopped
• 1 tbsp – coriander leaves, chopped
• 1 tbsp – Mint leaves, chopped
• 2 – eggs
• 2 tsp – Lime juice
Method:
- Lightly grease a 8 inch round microwave cake dish.
- Mix maida with baking powder, salt, sugar and turmeric powder.
- Combine 1/2 a cup of oil with onion in a shallow microwave proof dish and cook on full power for 3 minutes, stirring once half way through.
- Mix in the carrot, beans, chillies, ginger, coriander and mint leaves.
- Whisk the eggs with remaining oil and lime juice till frothy.
- Mix in the maida and vegetable mixtures.
- Pour in the prepared cake dish.
- Cook on full power, without covering, for 4 to 5 minutes. Let it stand for 10-15 minutes, till it cools slightly.
- Spread the top with some coriander/mint chutney. Decorate it with tomato slices and grated carrot.
- Cut and serve straight from the dish.
