Ingredients:
• 1/4 Cabbage (cut into square pieces)
• 3 Carrots (cut into 1/4 inch circles)
• 10 French beans (cut into 1 inch pieces)
• 1 green bell pepper (cut into square pieces)
• 1 cup of Cauliflower florets
• 1/2 cup of Cilantro (chopped for garnish)
• 1 Green chilli (sliced lengthwise)
• 1 white Onion (sliced thin)
• 1 bundle of bean thread (optional)
• 400ml can of Coconut Milk
• 1/2 tsp of Turmeric powder
• 1 tsp of Coriander seeds
• 3 tbsp of Olive oil / vegetable oil
• salt to taste
• water
Method:
- Place a large pot and heat oil. Add the coriander seeds, onions and green chilli and cook till onions are soft.
- Meanwhile, soak the bean thread in some warm water and snip them into 2 inch long pieces.
- Add vegetables, turmeric powder and salt to taste.
- Stir constantly until all the vegetables are cooked.
- Drain the bean thread. Add vegetables and stir till it is completely covered with turmeric and salt.
- Add enough water to cover the vegetables completely.
- Stir coconut milk to remove lumps before adding.
- Let the gravy come to a rolling boil before removing from the heat.
- Garnish with chopped coriander and serve with steamed rice.
