Ingredients:

• 8 – Eggs, separated
• 1/2 cup – Capsicum, finely chopped (discard seeds)
• 1/2 cup – Spring onion, chopped
• 1/2 cup – Tomato, finely chopped
• 1 tsp – Ginger, minced
• 2 tsp – green chillies, minced
• salt and pepper to taste
• 3 tsp – Oil

Method:

  1. Mix all the egg whites with 4 yolks. Beat lightly
  2. Add salt and pepper to it.
  3. Heat the oil in a pan, saute the ginger, green chillies and capsicum for 2-3 mins.
  4. Now add the spring onion and saute for another minute.
  5. Add the tomatoes and cook until they soften.
  6. To this add the eggs.
  7. Stir till the eggs are set into soft scramble.
