Ingredients:

• 1 cup – Pineapple
• 1/2 cup – semolina/rava
• 1 cup – Sugar
• 5 tbsp – Ghee
• 1 pinch – green food colour
• 1 drop – rose/vanilla essence
• 1 handful – Cashew nuts
• 1 tbsp – Raisins

Method:

  1. Boil pineapple for 3 minutes and blend it to a paste.
  2. Heat 1 tsp of oil in a pan/kadai and fry rava for 5 minutes.
  3. In the same kadai add 1 more tsp of ghee and fry cashew nuts and raisins. Keep it aside.
  4. Now boil 2 cups of water in the kadai, when it boils, add rava and mix slowly and gently so that it mixes well, and no lumps remain.
  5. Let it boil till it becomes soft.
  6. Add ghee. Now rava will start leaving the sides of the kadai.
  7. Now add sugar and pineapple paste and mix them well. Let it boil for 10 minutes.
  8. Add colour, essence and finally roasted cashew nuts and raisins.
  9. Hot, tasty pineapple kesari is delicious and ready to be served.
