Ingredients:
• 6 hard boiled eggs
• 4 tbsp – cooked shrimps
• 1.5 cups – mayonnaise
• 2 tbsp – grated Onion
• 1 tbsp – minced Coriander leaves
• thin strips – Capsicum
• salt and pepper to taste
Method:
- Slice eggs in half, lengthwise.
- Remove the yolks and mash well along with the mayonnaise, onion, coriander leaves, salt and pepper.
- Add the shrimps and blend well. Arrange egg whites on a bed of lettuce.
- Fill each hollow with the shrimp and egg yolk mixture and garnish with the strips of capsicum.
