Ingredients:

• 3 cups – mixed vegetables (bite sized)
• 2 cups – water
• 1 cup – fresh grated Coconut
• 1 cup – sour Curd
• 1/2 cup – sliced green Mango (if available)
• 1 tsp – Cumin seeds
• 10 Green chillies
• 1/2 tsp – Turmeric powder
• 1 1/2 tsp – salt
• 5 tsps – raw Coconut oil
• 1 sprig curry leaf

Method:

  1. Bring the water to a boil in a two quart saucepan.
  2. Add vegetables, mango and turmeric.
  3. Allow it to simmer till the vegetables are tender and mixed well.
  4. Use a blender to grind the coconut, cumin seeds, green chillies and salt to a fine paste.
  5. Add as little water as is necessary to facilitate grinding.
  6. Add paste to the vegetables and mix well.
  7. Add enough water to make 4 cups of avial and allow it to simmer for 10 mins.
  8. Add curd, stir and cook for 2 mins and add raw coconut oil and curry leaf.
  9. Stir well.
  10. Remove from heat.
