Ingredients:

• 2 cups – all purpose flour (maida)
• 1/3 cups – semolina (suji)
• 1 cup – vegetable oil/olive oil
• 1 tsp – ajwain seeds
• Vegetable oil for frying
• Salt to taste

Method:

  1. Sieve all purpose flour, add salt and ajwain.
  2. Add vegetable oil and mix it very well. Then add small quantity of water and make a smooth dough.
  3. Make small round rolls with dough.
  4. Roll it like thick chapatti (chapatti should be around 3-4 inches in diameter).
  5. Pierce every mathri with the help of fork or knife.
  6. Make five to six.
  7. Put in hot oil, deep fry on low to medium, till light brown.
  8. Do not fry on high heat, or the mathri will turn out oily and soggy.
  9. Drain and serve hot with green chutneys or with pickle.
