
Ingredients:
• 1 cup – basmati Rice
• 1 cup – peas
• 1 – Onion
• 2 to 3 – Cloves Garlic
• 1 – Bay Leaf
• 1 tsp – cumin
• 4 to 5 – Cloves
• 1/2 tsp – whole pepper
• Toasted Cashew nuts for garnish (optional)
• Sprigs of Cilantro and Mint for garnish
• Salt to taste
Method:
- Soak the rice for 30 minutes in water.
- Heat some butter/ghee/oil in a non-stick pan and saute chopped onions along with bay leaf, cloves, pepper, garlic and cumin.
- Once the onions get soft, add the drained rice and saute for another 3-4 minutes till the rice becomes light pink.
- Add 2.5 cups water and salt, mix well and then close the lid and cook for another 5-8 minutes till the rice is 80 per cent cooked.
- Add the peas at this point and mix it gently along with the rice.
- Cook for another 5 minutes until done.
- Garnish with cashews, mint and cilantro.
- Serve hot with any side dish from simple raita to rich dishes like shahi paneer.
