Ingredients:
• 1 cup basmati rice.
• 1 bunch Mint leaves (pudina).
• 2 tomatoes.
• 2 onions.
• 1-inch ginger.
• 2 green chillies.
• 4 to 5 Garlic flakes.
• 1/2 tsp Turmeric powder.
• 1/2 tsp chilli powder.
• 1 piece cinnamon.
• 2 or 3 cloves.
• 1 tsp ani seeds (sombu).
• 2 to 3 tbsp oil.
• 1 tsp of salt (or as per taste).
Method:
- Wash and soak rice for 10 minutes. Cut onions into thin long pieces.
- Cut tomatoes into small pieces.
- Grind mint leaves, ginger, garlic, cloves, cinnamon and aniseeds into a fine paste.
- Heat oil in a pan and add the onions and fry till translucent.
- Add the ground paste and tomatoes. Fry till oil separates.
- Add the powders and fry for a minute. Transfer the above into a pressure cooker or rice cooker.
- Add the soaked rice and pour 2 cups of water.
- Add salt as per taste and cook. If in pressure cooker, the maximum time is 7 minutes.
