Ingredients:

• Spinach – 2 bunches
• Water – 100 ml
• Yogurt (low fat) 32 oz – beaten
• Green chillies – 2, slit lengthwise
• Curry leaves – 5/6
• safoetida – 1 pinch
• Mustard Seeds – 1 tsp
• Salt – to taste
• Vegetable oil – 2.5 tbsp.

Method:

  1. Wash and chop the spinach into very fine pieces.
  2. Now cook the spinach in water until soft and drain the excess water.
  3. Let it cool.
  4. Meanwhile, for the seasoning, heat oil in a pan and splutter the mustard seeds.
  5. Then add the asafoetida, green chillies, curry leaves and saute for 1-2 mins. Keep aside.
  6. Now take the spinach, mix well with the yogurt, and add the seasoning.
  7. Serve with rotis or rice.
