
Ingredients:
• Spinach – 2 bunches
• Water – 100 ml
• Yogurt (low fat) 32 oz – beaten
• Green chillies – 2, slit lengthwise
• Curry leaves – 5/6
• safoetida – 1 pinch
• Mustard Seeds – 1 tsp
• Salt – to taste
• Vegetable oil – 2.5 tbsp.
Method:
- Wash and chop the spinach into very fine pieces.
- Now cook the spinach in water until soft and drain the excess water.
- Let it cool.
- Meanwhile, for the seasoning, heat oil in a pan and splutter the mustard seeds.
- Then add the asafoetida, green chillies, curry leaves and saute for 1-2 mins. Keep aside.
- Now take the spinach, mix well with the yogurt, and add the seasoning.
- Serve with rotis or rice.
