Ingredients:

• 1 cup – Thick-sliced Carrots
• 1 cup – Broccoli Florets
• 1 tbsp – Olive oil
• 1 tsp – Oregano
• 1/4 tsp – Chilli Flakes
• Salt to taste

Method:

  1. Boil water on high heat and add broccoli florets and carrots in it. Parboil for 5 minutes (or microwave).
  2. Drain and rinse with tap water. Pat them dry with a kitchen towel.
  3. Transfer to a big bowl and mix well after adding salt, olive oil, oregano and chilli flakes.
  4. Put vegetables on baking tray.
  5. Roast in oven for around 15-20 minutes at 200 degrees C.
  6. Transfer the tray to griller and grill for around 2-3 minutes. They will start smoking and become golden brown on the surface.
  7. Drizzle a few drops of lemon juice and serve. Recipe courtesy: My Own Food Court
