Ingredients:
• 1 – Snake gourd
• 1 – onion, chopped
• 2 – green chillies, slit opened
• 1/4 cup – split green grams
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 2 – Boiled eggs
• Salt
• Oil
• 5 – Curry leaves
Method:
- Soak split green gram in cold water for 10 minutes.
- Finely chop the snake gourd, remove seeds as well as peel the skin.
- Heat oil in a pan, add mustard seeds and urad dal and allow them to splutter, add chopped onions and split open green chillies.
- Stir them continuously until the onions turn translucent, add the finely chopped snake gourd pieces, soaked split green gram, curry leaves with enough salt and cook them for a while, add water a bit and close the lid and simmer.
- Once the vegetables are cooked, cut the boiled eggs into small cubes and toss gently to mix it with the already cooked vegetables.
- Serve hot.
