
Ingredients:
• 1/4 kg – Tomato
• 1/4 kg – small Onion
• 1/4 kg – Potato
• 8 – Green chillies
• Turmeric powder, a pinch
• salt to taste
• For Grinding:
• 3/4 cup – grated Coconut
• For Seasoning:
• 2 tsp – Ghee
• 1 tsp – Mustard Seeds
• Curry leaves, a few
Method:
- Peel the onion skin and cut each onions to 2 or 3 pieces.
- Cook the potatoes and peel the skin and mash them.
- Finely chop the tomatoes and green chillies.
- Grind the coconut to a fine paste.
- Heat ghee in a pan, add the mustard seeds.
- When the mustard seeds sputter, add the curry leaves, chopped onions and green chillies and fry till the onion becomes transparent.
- Add the tomatoes and let it fry for some time.
- Now add the potatoes, a pinch of turmeric and salt.
- When the mixture starts boiling, add the ground coconut and let it boil for a minute.
- Sodhi is now ready to serve with plain rice.
