
Ingredients:
• 1 cup – Flaked soya nuggets (uncooked)
• 1 – Large Onion, sliced lengthwise
• 2 – Large tomatoes, chopped
• 1 tsp – Garam Masala
• 1 tbsp – Ginger Garlic paste
• 1 tsp – Red Chilli powder
• 1 tsp – Turmeric
• 1 tsp – Coriander powder
• 1/2 tsp – Black pepper
• 2-3 – Green chillies, chopped fine
• Salt to taste
• 1 tsp – Oil
• 1/2 cup – Cilantro, chopped
• 1 tsp – Chaat masala (optional)
Method:
- Heat 2 cups of water in a pan and pour in the soya flakes into it.
- Add a pinch of salt and let it rest while you prepare the tadka/ base for sabzi.
- Heat oil in a pan, fry ginger garlic paste in it till it turns light brown.
- Add onions and fry for a minute.
- Add salt and mix, cook this covered for around 4-5 minutes on medium flame.
- Add tomatoes, all the spices except garam masala and chaat masala.
- Cook covered till the tomatoes get mushy, for around 7-8 minutes on low-medium flame.
- While the tomatoes are getting cooked, squeeze out all the water from the soaked soya and drain the flakes well.
- Mix the soya flakes and give it a nice stir.
- Cook covered on low flame for another 5-6 minutes and turn off the flame.
- Sprinkle a liberal dose of garam masala and a dash of chaat masala on top along with chopped coriander leaves.
- Serve hot.
