Ingredients:
• Idli Rice (boiled) – 5 cups
• Whole Urad Dal – 1 cup
• Fenugreek seeds – 2 tsp
• salt to taste
• For seasoning: Chopped Green chillies – 1 tsp
• Ginger 2 tsp
• Curry leaves 1 tsp
• Chopped Cashewnuts 2 tsp
• Grated Coconut – 3 tsp
• Soaked Channa dal – 3 tsp
• Hing powder – 2 tsp
• Black pepper Corn – 2 tsp
Method:
- Soak rice overnight.
- Soak the urad dal and fenugreek seeds in the morning for 3 hours.
- Grind the soaked rice separately to a coarse consistency (like rava).
- Grind the urad dal to a fine paste (fluffy and soft).
- Mix the rice and dal paste, add salt and let the dough ferment for 5-6 hours.
- Mix all the ingredients for seasoning in the dough.
- Pour the dough in the idli mould and steam for 7 -8 mins.
- Serve with any chutney.
