
Ingredients:
• 1/2 kg – mixed vegetables (peas, cauliflower, French beans or any seasonal vegetables)
• 1/2 cup – fresh Coconut (scraped)
• 1 large bunch each – Mint and Coriander leaves
• 3 – Green chillies (chopped)
• 1/2 inch piece – Ginger
• 2 Cloves – Garlic
• A few peppercorns
• 1/2 tsp – cumin
• A small ball – Tamarind
• 1 – large Onion (chopped)
• Salt to taste
• Curry leaves (optional)
• 1 – large Tomato (optional)
Method:
- Cut the vegetables into small pieces and set aside.
- Grind together the coconut, coriander, mint leaves, green chillies, ginger, garlic, peppercorns, cumin and tamarind.
- Fry the onion in oil or ghee till brown, then fry the vegetables lightly.
- Add the ground masala, salt, tomato and the curry leaves.
- Cover with water and cook till the vegetables are tender.
