Ingredients:

• 1/2 kg – Poha (thick ones)
• 2 – medium sized Onions
• 2 – medium sized Potatoes
• 3 to 4 tbsp – Green peas
• 1.5 tsp – Mustard Seeds
• 5 to 6 – Green chillies
• 1.5 tsp – Turmeric powder
• 2 to 3 tbsp – Coriander leaves (finely chopped)
• 6 to 7 tbsp – oil
• 1 – Capsicum
• 1 – Lemon juice
• 1 – Carrot
• Few Curry leaves
• Salt to taste

Method:

  1. Wash the poha very well and drain out all the water and keep aside.
  2. Heat oil in a kadai, add mustard seeds. When they splutter, add finely chopped green chillies, onions, potatoes, carrot, green peas and curry leaves.
  3. Saute it till the onions are light pink in colour and the vegetables are a little tender.
  4. Add poha, salt to taste, turmeric powder, finely chopped coriander leaves, lemon juice and water. Mix well.
  5. Let it simmer for 5 mins and serve hot.
