Ingredients:
• 1/2 kg – Poha (thick ones)
• 2 – medium sized Onions
• 2 – medium sized Potatoes
• 3 to 4 tbsp – Green peas
• 1.5 tsp – Mustard Seeds
• 5 to 6 – Green chillies
• 1.5 tsp – Turmeric powder
• 2 to 3 tbsp – Coriander leaves (finely chopped)
• 6 to 7 tbsp – oil
• 1 – Capsicum
• 1 – Lemon juice
• 1 – Carrot
• Few Curry leaves
• Salt to taste
Method:
- Wash the poha very well and drain out all the water and keep aside.
- Heat oil in a kadai, add mustard seeds. When they splutter, add finely chopped green chillies, onions, potatoes, carrot, green peas and curry leaves.
- Saute it till the onions are light pink in colour and the vegetables are a little tender.
- Add poha, salt to taste, turmeric powder, finely chopped coriander leaves, lemon juice and water. Mix well.
- Let it simmer for 5 mins and serve hot.
