
Ingredients:
• 1 cup – Basmati Rice
• 1 cup – Finely cut vegetables (beans, cauliflower, onion, carrot)
• 1/2 tsp – Ginger paste
• 1/2 tsp – Garlic paste
• 4 – Cloves
• 2 – Cinnamon
• 1 – Bay Leaf
• Salt to taste
• 1 tbsp – Ghee
• Roasted cashews- 6-7
• Oil to fry.
Method:
- Soak the basmati rice in water for 10 mins.
- Heat ghee in a pan and saute the rice for 5 mins.
- Keep aside.
- Now heat 1 tbsp of oil and saute the cloves, cinnamon, bay leaves and onion until pink.
- Add all the finely cut vegetables and saute for another 5 mins.
- Now add the basmati rice and 3-4 cups of water and let it cook.
- Garnish with roasted cashews and finely chopped coriander leaves.
- Serve hot with raitha.
