Ingredients:

• 1kg – Chicken
• 4 – Tomatoes (sliced finely)
• 4 – Onions (sliced finely)
• 1/4 cup – Coriander leaves
• For red ground masala:
• 2 tsp – chilli powder
• 1/4 tsp – Turmeric powder
• 1 tsp – pepper powder
• 2 pieces – Cinnamon
• 2 – Cardamom
• 6 – Cloves
• 1/4 tsp – cumin/jeera
• 1/4 tsp – Saunf/perum jeerakam/fennel
• Green ground masala:
• 4 – Green chillies
• 1-inch piece – Ginger
• 8-10 – Garlic

Method:

  1. Cut chicken into bite-sized pieces.
  2. Apply half of the red ground masala and half of the green masala on the chicken and keep aside for an hour.
  3. Fry the onion in the required quantity of oil; remove the fried (brown) onions and then fry the chicken pieces till brown.
  4. Remove the chicken pieces and then fry the remaining masala in oil.
  5. Add the tomatoes and keep stirring till the oil separates; then add the chicken pieces, onions, and coriander leaves.
  6. Mix well and cook on slow fire till the gravy thickens.
  7. There is no need to add extra water.
