Ingredients:
• 1kg – Chicken
• 4 – Tomatoes (sliced finely)
• 4 – Onions (sliced finely)
• 1/4 cup – Coriander leaves
• For red ground masala:
• 2 tsp – chilli powder
• 1/4 tsp – Turmeric powder
• 1 tsp – pepper powder
• 2 pieces – Cinnamon
• 2 – Cardamom
• 6 – Cloves
• 1/4 tsp – cumin/jeera
• 1/4 tsp – Saunf/perum jeerakam/fennel
• Green ground masala:
• 4 – Green chillies
• 1-inch piece – Ginger
• 8-10 – Garlic
Method:
- Cut chicken into bite-sized pieces.
- Apply half of the red ground masala and half of the green masala on the chicken and keep aside for an hour.
- Fry the onion in the required quantity of oil; remove the fried (brown) onions and then fry the chicken pieces till brown.
- Remove the chicken pieces and then fry the remaining masala in oil.
- Add the tomatoes and keep stirring till the oil separates; then add the chicken pieces, onions, and coriander leaves.
- Mix well and cook on slow fire till the gravy thickens.
- There is no need to add extra water.
