Ingredients:

• 150ml. Chicken stock
• 50 gms. Coconut Milk
• 30 gms. Thai galangal, chopped
• 30 gms. lemongrass
• 20 gms. sliced red Onion
• 10 gms. Thai Lime leaves
• 15 gms. Thai Red Chilli
• 150 gms. Chicken breast, sliced
• 2 tsp. Lime juice
• 2 tsp. Oyster sauce
• 2 tsp. fish sauce
• 30 gms. straw Mushroom
• Salt to taste
• 20 gms. Thai parsley, chopped
• 30 gms. coriander leaves, chopped

Method:

  1. Heat chicken stock and coconut milk along with galangal, lemongrass and red onion, Thai lime leaves and red chillies. Let it boil.
  2. Add chicken, lime juice, oyster sauce, fish sauce, straw mushroom and salt.
  3. Remove from heat and transfer to a serving bowl.
  4. Garnish with Thai parsley and coriander leaves.
