Ingredients:

• 1 cup – chopped cooked Chicken breast
• 2 cans – Chicken broth
• 1 can – diced Tomatoes with Green chilli peppers
• 1 tbsp – Olive oil
• 1 cup – chopped Onion
• 1 cup – diced green bell pepper
• 2 Cloves – garlic, pressed
• 1 tsp – black pepper powder (optional)

Method:

  1. Heat olive oil in a large saucepan over medium heat.
  2. Saute onion, green pepper and garlic until tender. Stir in chicken broth, chicken pieces and the diced tomatoes and chillies.
  3. Simmer covered for at least 10 minutes.
  4. Serve hot.
