
Ingredients:
• 1/2 kg -eggplant, cut lengthwise
• 2 medium – onions, chopped
• 2 – Tomatoes
• For Masala:
• 1 tbsp – Bengal Gram
• 1 tsp – Coriander seeds
• 2 – Cloves
• 2 – Cardamom
• A bit of Cinnamon
• A few peppercorns
• 3-4 flakes – Garlic
• A small piece of Ginger
• 2 tbsp – oil
• Red Chilli powder
• Turmeric powder
• 1/4 cup – water
• salt to taste.
• Coriander leaves, chopped
Method:
- Roast all the ingredients for the masala.
- Separately saute onions and tomatoes.
- Grind this along with the roasted masala to a fine paste.
- Fry this paste, add eggplant, turmeric powder, chilli powder and salt.
- Then add water and cook on a medium flame till done.
- Garnish with coriander leaves and serve hot.
