
Ingredients:
• 350 to 400 g – cooked Pasta
• 1/2 cup – Peanut Butter
• 1/2 cup – chopped Parsley or Coriander leaves
• 1/4 cup – soya sauce
• 2 tbsp – Lemon juice
• 3 to 4 tbsp – sesame oil
• 1 tsp – hot chilli sauce
• 1 tsp – Red Chilli powder
• 5 spring onions, washed, trimmed and cut diagonally into 1.5 cm pieces
• 2.5 tbsp – chopped Peanuts
Method:
- Whisk together the peanut butter, soya sauce and lemon juice until smooth and well blended.
- Add the sesame oil, hot chilli sauce and the chilli powder, blend and set aside.
- Before mixing the sauce into the pasta add spring onions and parsley.
- Add the sauce to the pasta and garnish with chopped peanuts and a few sprigs of coriander.
