Ingredients:

• 350 to 400 g – cooked Pasta
• 1/2 cup – Peanut Butter
• 1/2 cup – chopped Parsley or Coriander leaves
• 1/4 cup – soya sauce
• 2 tbsp – Lemon juice
• 3 to 4 tbsp – sesame oil
• 1 tsp – hot chilli sauce
• 1 tsp – Red Chilli powder
• 5 spring onions, washed, trimmed and cut diagonally into 1.5 cm pieces
• 2.5 tbsp – chopped Peanuts

Method:

  1. Whisk together the peanut butter, soya sauce and lemon juice until smooth and well blended.
  2. Add the sesame oil, hot chilli sauce and the chilli powder, blend and set aside.
  3. Before mixing the sauce into the pasta add spring onions and parsley.
  4. Add the sauce to the pasta and garnish with chopped peanuts and a few sprigs of coriander.
