Ingredients:

• 10 slices – sandwich bread
• 1 cup – thick white sauce
• 1/2 cup – grated cheese (processed)
• 2 – crushed Red Chillies
• salt to taste
• 1/4 cup – Corn (boiled or canned)
• 1/4 cup – mixed vegetables (beans, carrots, potatoes) boiled
• 2 tbsp – finely chopped coriander
• For the white sauce:
• 2 tbsp – white flour (maida)
• 2 tsp -butter
• 1.5 cups – Milk
• 2 tbsp – grated cheese
• salt and pepper to taste

Method:

  1. Take a heavy pan and dry-roast the flour till you get an aroma. Cool the flour.
  2. Heat butter in the same pan and add half the milk and cheese.
  3. Mix remaining milk and flour to make smooth batter.
  4. Add the batter to the boiling milk and stir continuously.
  5. Cook till the sauce is fairly thick. Add salt and pepper.
  6. Butter the bread slices on both sides.
  7. Cut into 2 triangles each. Or keep whole, as desired.
  8. To the white sauce add the corn, mixed vegetables, salt and mix.
  9. Cook a little to thicken if required.
  10. Spread sauce on each slice.
  11. Sprinkle crushed chilli, coriander and cheese.
  12. Bake on a rack in pre-heated oven for 10-12 mins or till the bread toasts to a light, crisp brown.
  13. Serve hot with sauce.
