Ingredients:

• 1 bunch – Spinach leaves
• 1 cup – gram flour
• 1 tbsp – Rice flour
• 1 tbsp – plain flour
• 1/2 tsp – cumin powder
• 1/4 tsp – Turmeric powder
• 2 – Green chillies
• 1 – Garlic flake
• 1 – small piece of Ginger
• 1 tsp – hot oil
• salt to taste
• oil to deep fry

Method:

  1. Clean spinach, keeping whole leaves sans stem.
  2. Wipe down any excess moisture, keep aside till required.
  3. Crush ginger, garlic, chillies to a paste.
  4. In a deep bowl, mix all flours.
  5. Add salt, turmeric, ground paste, and a little water.
  6. Mix into a smooth batter, adding more water if required.
  7. Add in hot oil, mix.
  8. Mixture should coat back of spoon evenly.
  9. Heat oil to deep fry in a frying pan.
  10. Dip one leaf in batter and drop into hot oil.
  11. Repeat with rest of the leaves.
  12. Fry on medium heat till light golden brown on both sides.
  13. Drain on absorbent paper.
  14. Serve hot with ketchup, tamarind chutney or green chutney.
