
Ingredients:
• 1 packet Lemon gelatine
• 1 bunch spinach, washed and stemmed
• 1 onion, chopped finely
• 2 tbsp chopped Spring onion
• 4 tbsp Vinegar
• 1/4 tsp mustard powder
• 1/2 cup grated cheese
• 1/4 cup chopped boiled eggs
• 1/2 cup mayonnaise
• 1/4 tsp salt
• 1 cup boiling water
• 1/2 cup cold water
Method:
- Dissolve gelatine and salt in boiling water.
- Add cold water and vinegar.
- Mix it well.
- Pour in a glass bowl.
- Chill till set.
- Chop spinach.
- Cook till tender in water.
- Drain in colander and pour ice cold water over it, to retain the colour.
- Drain and cool.
- Add spinach, onion, spring onion and mustard in the set gelatine.
- Mix it.
- Pour it over salad dish.
- Garnish with mayonnaise, cheese and boiled eggs.
- Serve chilled.
