Ingredients:
• 1 bunch – Spinach
• 1/2 – large Onion
• 2 – large Garlic buds finely cut
• 1/2 tbsp – Cumin seeds
• 1 tbsp – Vinegar
• 2 – Green chillies
• 1 cup – Milk
• 1/4 tbsp – crushed pepper
• 1/4 tbsp – Ginger
• salt to taste
• Olive oil
Method:
- Boil spinach fully covered in water on medium flame for 10 to 12 mins. Add a little salt while boiling.
- Simultaneously, in a pan, fry onions in 2 tbsps of oil till it turns light brown.
- Add cumin seeds, garlic, ginger and chillies and fry for about 5 mins.
- Add vinegar to the above.
- Drain the spinach and blend it with the above mixture into a smooth pulp in a mixie.
- Heat the pulp, add milk, pepper and bring it to boil.
- Serve hot.
