Ingredients:

• 250 g – Refined flour or Maida
• 300 g – powdered Sugar
• 250 g – Butter
• 4 – eggs, beaten well
• 1/2 cup – Milk
• 1 tsp – baking powder
• 1 tsp – vanilla essence

Method:

  1. Sift the flour and baking powder together.
  2. Cream the butter and sugar together.
  3. Add the beaten eggs and vanilla essence and mix well.
  4. Fold in the flour a little at a time.
  5. Add milk if the mixture is too thick.
  6. Pour into a greased and floured cake tin and bake for 40 to 45 minutes till the cake is done.
  7. Butter icing: Beat 200 g butter and 500 g icing sugar together until creamy.
  8. Add 2 tsps vanilla essence and 2 drops pink or green food colour.
  9. Use a spatula to cover the cake with the butter icing.
  10. Then with a wet fork make soft peaks across the surface of the icing.
  11. Decorate as desired.
