Ingredients:

• A little Tamarind
• 1/2 cup – sprouted green gram
• 1 cup – amaranth greens
• 2 – Green chillies
• 1 tsp – Jaggery powder
• 3 to 4 – dry Red Chillies
• 1/2 tbsp – Coriander seeds
• 1/2 tsp – Cumin seeds
• 1.5 tsp black pepper Corns
• 1 piece – Cinnamon
• 2 – Cloves Garlic
• 1 tbsp – grated Coconut
• Salt to taste
• 2 Cloves
• 2 tsps oil

Method:

  1. Soak tamarind in water and extract the juice.
  2. Boil sprouts with water.
  3. When it is half cooked, add the greens.
  4. When the gram and the greens are cooked, add the tamarind extract, salt and jaggery.
  5. Let it simmer for 3 minutes.
  6. Meanwhile, heat the oil and roast all the ingredients from red chillies to garlic and grind them with coconut to a smooth paste.
  7. Add the ground paste to the gram and greens and allow it to simmer for 5 minutes.
  8. Serve hot with Chapatti or rice.
