Ingredients:

• eggs – 2, lightly beaten
• Mashed Bananas – 2.5 cups
• Rice flour – 1 cup
• Tapioca flour – 1/2 cup
• Sugar – 2/3 cups
• Thick Coconut Milk – 1/2 cup
• Grated Coconut – 3 cups
• Salt – 1/2 tsp

Method:

  1. Combine bananas with rice flour, tapioca flour, sugar, salt, coconut milk, eggs and 2 cups of grated coconut into a smooth mixture.
  2. Pour the mixture in greased cupcake moulds and steam for 30 minutes.
  3. Cool and turn the cakes out.
  4. Serve sprinkled with remaining coconut.
