Ingredients:
• 1 cup – gram flour
• 1/2 cup – fine semolina
• 2 tbsp – cocoa powder
• 3 tbsp – ground Sugar
• 1 – lemon, juice extracted strained
• 1.5 cup – water
• 1.5 tsp – eno fruit salt
• 1/2 tsp – salt
• Follow up:
• 1 tsp – oil
• 1 tsp – Butter
• 2 tbsp – water
Method:
- Sieve flour into a large bowl. Add semolina, sugar and salt. Mix cocoa and sugar well.
- Add to mixture.
- Add in lemon juice, 1.5 cup water.
- Mix well to form smooth batter, keep aside.
- Put a large vessel or steamer to heat.
- Place stand inside.
- Grease a 9 cake pan, place inside vessel.
- Heat vessel, simmering water.
- Dissolve eno in 2 tbsp. water.
- Pour onto mixture, quickly beat well till thick and fluffy.
- Pour immediately into prepared pan.
- Cover lid turn on high, steam for 12-13 mins.
- Take off lid, allow to simmer in pan, for a minute.
- Remove, cool cake pan on work surface for 7-10 mins.
- Meanwhile mix follow-up ingredients in a small pan.
- Bring to a boil, pour over slightly cooled pudding, evenly.
- Allow water to be soaked up into the pudding for a few minutes.
- Serve warm or hot, with coffee or tea or even icecream scoops.
