Ingredients:
• For Mutton rolls:
• 450 g – meat, finely minced (kheema)
• 1 tsp – Garlic paste
• 3/4 tsp – salt
• 1 tbsp – refined oil
• 3/4 tsp – Garam Masala
• 2 – beaten eggs
• 2 tbsp – Onions (finely chopped)
• 2 – Green chillies (finely chopped)
• 1/2 cup – breadcrumbs
• For kofta:
• 20 – large Cabbage leaves (blanched in salted water and drained well)
• 1 tbsp – oil
• 1/4 tsp – chilli powder
• 1 cup – water
Method:
- For mutton rolls:
- Mix all the ingredients and knead thoroughly for 4-5 minutes.
- Shape into 20 rolls.
- Refrigerate for 20 minutes.
- For kofta:
- Enclose the mutton rolls in each cabbage leaf, tucking the ends in well.
- Place the cabbage rolls in a pan with 1 cup of water to which 1 tsp of oil has been added.
- Cook, covered, on low flame for about 25-30 minutes, till the water dries up.
- Serve hot, sprinkled with a little chilli powder if desired.
