Ingredients:
• 1.5 cups – mixed seasonal vegetables
• 1/2 cup – onion, finely chopped
• 1/2 cup – grated Coconut
• 1/4 cup – Green peas
• 1/4 tsp – Turmeric powder
• 3 to 4 dry Red Chillies
• 1 tsp – Coriander seeds
• 1 tsp – Poppy Seeds
• 1 piece Cinnamon
• 1 cm piece Ginger
• 8 Cloves Garlic
• 2 tbsp – coriander leaves, chopped
• 1 tbsp – roasted Bengal Gram
• salt to taste
• 3 Cloves
• 3 tbsp – oil
Method:
- Cook vegetables with water, salt and turmeric.
- Dry roast chillies, coriander seeds, poppy seeds, cloves and cinnamon and powder them together.
- Grind ginger, garlic, coriander leaves, coconut and roasted gram together to a fine paste.
- Heat the oil and fry onion till golden brown.
- Add the ground paste and fry for 2 minutes.
- Add the powdered Masala and 1 cup of water and simmer for 5 minutes.
- Add the cooked vegetables and simmer for 3 more minutes.
- Serve hot with Poori or Chapatti
- The consistency of this dish is like Kurma.
