Ingredients:

• 1 – beetroot, grated
• 1.5 cups – Spinach stems, chopped to 1 inch size
• Handful -moong dal soaked for 1 hr
• 2 – Green chillies
• 1 sprig – Curry leaves
• 1/4 tsp – mustard
• 1/4 tsp – cumin
• 2 tbsp – oil
• Salt to taste

Method:

  1. Heat oil in a pan, add mustard, cumin, curry leaves and chillies, allow them to crackle.
  2. Add dal, salt and turmeric, close the lid and cook for 2 to 3 mins.
  3. Add the spinach stems and fry till the stems become tender.
  4. Add beetroot and fry till cooked.
